Microsoft Office allows one to encrypt and add passwords to be able to open files in Word or Excel. How unbreakable is this?

Almost unbreakable, depending on the version. It is breakable, on extremely lucky occasions, but only if you’re a very experienced hacker who has worked with Microsoft encrypting software before.
